Breakfast Burrito

  • 1 tsp. chipotle paste
  • 1 large-size egg
  • 1 whole meal tortilla wrap, warmed
  • 1 tsp. rapeseed oil
  • 4 tbsp. chopped kale
  • 7 cherry tomatoes, halved
  • 1 small avocado, peeled & sliced
Instructions: -
  • Whisk the chipotle paste, egg, and a pinch of salt and pepper in the jug. Heat the oil until shimmering in the large frying pan, then add the kale and tomatoes.
  • Remove the pan when the kale has wilted, and the tomatoes have softened, then side aside everything to another side of the pan and serve.
  • Pour the beaten egg into half of the pan that has been cleared and scramble it. Place everything into the center layer by layer of your wrap, with the avocado on top, and then wrap and eat right away.
