Baked Cod with Cherry Tomatoes

  • 1½ lb. cod
  • 2 pints cherry tomatoes
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. sea salt
  • 3 garlic cloves, sliced thinly
  • 1 tbsp. fresh chopped sage
  • 2 medium-size lemons, thinly sliced
  • 2 tbsp. capers to garnish
Instructions: -
  • Set the oven range to 325 F to preheat. Spread the tomatoes around the cod in the baking dish, and then drizzle the olive oil over both the cod and the tomatoes.
  • Sprinkle salt, garlic, and sage over the cod and tomatoes, rubbed into the cod, and then topped with sliced lemons.
  • Bake for 45 minutes until the cod easily flakes apart with a fork, then serve garnished with capers.
