Poached Eggs with Smashed Avocado & Tomatoes

  • 3-4 cherry tomatoes, halved
  • ½ tsp. rapeseed oil
  • 2 large-size eggs
  • 1 small-size ripe avocado
  • 2 slices of whole meal soda bread
  • ½ cup chopped rocket leaves
Instructions: -
  • Put the nonstick frying pan over moderate heat, lightly brush the cut surface of the tomatoes with a bit of oil, then cook the tomatoes, cut side down, in the pan until they have softened and become slightly caramelized about 5 minutes.
  • Prepare a pan of boiling water, carefully break in the eggs, and cook for 1-2 minutes until the whites are stable, but the yolks are soupy runny until the whites are firm.
  • Half the avocado; remove the stones, then scoop out the flesh and spread it on the bread.
  • Add the eggs season with black pepper; top each portion with a handful of rockets. Serve tomatoes on the side of the meal.
